Non-stick pans: what actually kills them
A non-stick pan almost never dies of heat. It dies of a metal spatula, of being heated empty and of the dishwasher — three habits you can fix without buying anything.

Why a pan « stops working » after six months
People say a non-stick pan « wears out ». That is rarely true literally. The coating, a polymer a few microns thick, handles normal domestic cooking heat very well. What destroys it is scratching: every stroke of a metal spatula opens a furrow, and food catches in it. Once sticking begins it worsens on its own — you scrape harder, so you scratch more.
The second factor is overheating empty. A coating handles badly a pan left empty three minutes over high heat: beyond two hundred and fifty degrees it starts degrading, with nothing visible. The practical rule is simple: put the fat in before lighting the hob, or use medium heat and wait.
The third is the dishwasher. Alkaline detergents slowly attack the coating and its bond to the metal. Many pans are sold as dishwasher-safe; they are, in the sense that they do not fall apart — not in the sense that they last as long as hand washing.
What silicone does and does not do
Food-grade silicone takes high temperatures, generally up to two hundred and thirty degrees depending on the formulation. That is well above pan cooking, which rarely exceeds one hundred and eighty degrees at the core.
Its real limit is not temperature but permanent deformation. A handle left resting on the rim of a boiling pot eventually keeps the curve. That is not breakage, it is creep: the material yields slowly under stress when hot. A spoon rest solves it and costs less than a new set.
Second limit: pure silicone is too soft to turn anything heavy. Good utensils have a rigid core — steel or filled nylon — sheathed in silicone. A fully soft utensil bends under a steak and feels cheap when it is simply the wrong design for that job.
Third point, often ignored: silicone absorbs strong odours if left dirty. Curry, garlic, fish. A quick wash right after use is enough; a long soak is not.
Boiling over is prevented, not watched
Pasta water boils over by a precise mechanism: the starch released by the pasta stabilises the steam bubbles, which form a dense foam instead of bursting. That foam rises, reaches the rim, and spills. Lowering the heat works — provided you are there at the right moment, which is exactly the problem.
A lid with an overhanging skirt works differently: it breaks the foam mechanically and lets steam escape sideways, avoiding pressure build-up. You can therefore walk away without having to clean the hob afterwards.
It does not replace a normal lid for bringing water to the boil: a solid lid boils faster because it holds the heat. The useful sequence is therefore solid lid until boiling, then the boil-over lid for the cook.
One fallback worth knowing: a wooden spoon laid across the pot also breaks the foam, partly. It is less effective and it moves, but it gets you out of trouble.
Oil poured by eye, or measured
A tablespoon of oil weighs about fourteen grams, roughly a hundred and twenty-five calories. Poured by eye from the bottle, the real quantity varies threefold depending on the tilt and the neck. Over daily cooking the gap becomes significant — not morally, but because it changes the result: too much oil in a pan boils vegetables instead of searing them.
A sprayer settles two things at once: quantity and spread. A thin film covers the whole surface, which a stream poured into the middle never does — hence pans that burn on one side and stay pale on the other.
Its limit is viscosity. Virgin olive, sunflower and rapeseed oils pass without difficulty. Truffle, walnut or toasted sesame oil, thicker and full of particles, clog the pump within a few uses. Those oils are poured, not sprayed.
And a sprayer needs cleaning: hot water drawn through the pump after every oil change prevents the residue from oxidising, which is what eventually gives a rancid taste.
Three habits that make cookware last
First, never cut in the pan. It sounds obvious and happens daily, to share an omelette or free a chicken breast. A knife scratches a coating in one movement.
Then, let it cool before washing. Thermal shock — a scorching pan under cold water — warps the base, and a warped base no longer heats evenly on induction. Five minutes of waiting is enough.
Finally, stack with protection. A pan placed directly inside another scratches its coating every time the cupboard is disturbed. A tea towel or a felt disc between two pans costs nothing and doubles their life.
None of these three requires extra equipment. Measured on real kitchens, they are the difference between a pan replaced every eighteen months and one that lasts five years.
